The only bad thing about Paradise Gardens was having to come home sooner than I'd have liked. Early Monday shift = no fun on sunday nights : (
Still, I got to make some nice Italian bread salad. This was Donna Klein's recipe from her book 'The Mediterranean Vegan Kitchen'. It made a lovely, light summer meal. Think I'll make this one again.
