Tofu 'Egg Mayonnaise'
I never really miss cheese the way that I thought I would before I became vegan but I do sometimes miss eggs. Nothing can quite replicate a lovely soft-boiled egg with soldiers but happily I've had successful experiments with scrambled tofu so I felt hopeful about trying a recipe for a tofu version of egg mayonnaise. Crumbled tofu and vegan mayo just need a little bit of help from some Dijon mustard, red onion, cider vinegar & a little dill to turn them into a tasty sandwich filling as good (and maybe even better) than the real thing. I usually fall back on hummus, nut butter or sliced veggie sausage for my sarnies so it's nice to have something new to try.
