Vietnamese Spring Rolls


We had the lovely Rebecca & Phil round for dinner last night & decided to cook some Vietnamese food. It was a bit of an experiment but turned out largely okay. We started off with these spring rolls which we've been meaning to have a go at since we got back from our travels. We really enjoyed eating them in Vietnam as they're so light & fresh tasting, very different to fried spring rolls. Handling the rice papers turned out to be not as difficult as we first thought. Sadly, I was so busy chattering that I forgot to take any more photos after this one.
